Give batch cooking a try this Autumn with Jamie Oliver’s delicious baked means with mini sausage meatballs and tangy feta
Batch cooking saves us time and money. And when we find a recipe we love, there’s no such thing as too many leftovers. Dig in to Jamie Oliver’s easy and tasty baked bean dish that comes together with just five ingredients!
Serves 6
Ingredients:
- 6 spicy higher-welfare pork sausages or veggie alternative (400g total)
- 320g frozen chopped mixed onion, carrot and celery (often called ‘soffritto mix’)
- 1 x 700g jar of giant butter beans or 2 x 400g tins of butter beans
- 2 x 400g tins of plum tomatoes
- 200g feta cheese
Directions
- Preheat the oven to 180°C and place a large non-stick ovenproof pan on medium heat with one tablespoon of olive oil
- Pull the sausage meat out of the skin and roll into around 3cm balls. Add the balls straight to the pan and brown all over, around 3 minutes, and remove from the pan
- Add the veg mixture to the pan and cook for 10 minutes, then add the beans (juices or rinsed – whatever your preference)
- Scrunch the tomatoes into the veg mixture, bring to a boil, and season to taste
- Break up the feta and stir in half, add the meatballs, and then sprinkle the rest of the feta on top
- Bake in the oven for 25 minutes, or until the sauce has thickened
- Serve with bread, pasta, rice, or whatever helps scoop up all that delicious sauce
